Change from `userdata` to `extensions`, in line with BlueOS recommended practices.
`patrickelectric` -> `BlueOS-Community`, to match the repo's new home.

I'm not sure whether removing the base
/usr/blueos/userdata:/userdatabinding will cause issues, but hopefully it's not currently being used.
