mount minio bucket in docker container

Thanks @devincowan. I saw that project but noticed it was archived so I hadn't tried it out. I was just able to get s3fs to work using https://play.min.io so the issues I was having likely have to do with our deploy, not s3fs.

I just ran extract on the bucket mounted in a docker container and it extracted all the metadata and wrote the .hs/ directory without issue.
