Config File is always overwritten and cannot be changed

Describe the bug
Every time I change the config file, setting privacy settings etc. and restart minecraft, it completely resets the config.

To Reproduce
Steps to reproduce the behavior:

1. Edit watut-client.toml
2. Start game
3. No change in mod behaviour, opening file shows default settings again

Mod and Minecraft version:
Without this your issue will likely get closed for lacking enough info.
