Bring back Cocoapods support

Paul Puey from EDGE expressed on LCWG call #71 that they were been having issues ever since cocoapods was dropped.

Although we originally reached out publicly to voice this kind of concerns out before removing (and didn't get any feedback) the fact is that EDGE's support of Zcash would be easier if the iOS SDK supported cocoapods again.

Describe the solution you'd like

ECC should take advantage of the package name change and roll out a new Pod called zcash-swift-wallet-sdk on Cocoapods managing it with a new identity (previous one was tied to myself) that's 100% company owned.

Alternatives you've considered

I don't t think there's actually an alternative since this is a requirement coming from React Native and not EDGE themselves. EDGE is only affected by the lack of support for SPM from React.
