use .env or CLI env labels for reused variables #11

see the docker docs for info on how to substitute env values. would ben ie if they could be declared up above at top, but will likely be syntax errors... so need to set in .env or something. setting these will make it much easier to support multiple themes, as differences in current systems mostly haveto do with Node versions & inclusion of python + build-bae, which coul both be gotten around I think.
