The data is formatted so that each race is an independent yes/no variable. Can we consolidate this like we have for other demographics?

Yes! This is in column "race_ethnicity" in the person table for the data objects available at metc-tbi-helper. See https://github.com/Metropolitan-Council/metc.tbi.helper/blob/main/data-raw/06-derive-var-person-race.R
