I would like to know what happens in your software if a non-binary person is scanned. Is it detected correctly or is it inevitably referred to it's gender expression ?

As this project implements machine learning, how it will behave depends on the training set. If the training phase includes non-binary data then it should, by theory, work with that.
Actually, this project is a very simple demonstration of gender recognition using the template-matching technique, and is not suitable for practical applications. Also, its accuracy is very low by today's standard.
