Update continuous integration to use the updated coveralls github workflow

Requires pytest-cov to produce report in lcov format

Description

Updated the coveralls workflow as recommended in the docs

Thanks for sorting out the coveralls action! It was giving me issues last week, but I guess it was because I was missing the html vs. lcov difference.
