This idea is based on an incredibly important location of my fantasy worldbuilding, a huge zone of land in the country of Centreis. You don't have to call it "Centeric Plateau" since it's not a hugely public story, but something similar would be cool.
The plateaus themselves are very tall and stacked, with shorter platforms closer to rivers, around 180~ blocks at maximum points. Black ice rivers run throughout them at sea level. The temperature is very cold, and it snows/thunders frequently. The plateaus are made almost entirely of stone, rocky stone, and andesite, and covered in moss and mossy stone variants. Foliage matches the moss, water is a nearly-black blue, and the sky is a purpley-blue grey with tiny snow-like particles. Ambient wind would be a fun addition. Life is rare, but horses and sheep can be found around occasionally.
There are features that I'm not sure you'd be able to do, bit I'll say them anyway. The area is filled with crystal caverns (canonically a special gemstone cleverly called Centrium, but quartz or whatever will work too), which are common both at surface level and deep underground. There are also rivers on top of the plateaus which go down the levels as waterfalls.
Overall it's very grey and almost depressing, but it's also a unique concept that I'm sure someone else out there would greatly enjoy. Also attached an image for a very rough example. You'd think I'd be able to draw landscapes better, but alas.
