Analytics, Tracing And Logging

Currently the main deployment uses sentry and posthog. We already replaced most of what sentry does with a platform internal approach. Now metrics (e.g flowpilot) should not be sent to posthog anymore. We want to have our own platform internal tracing in a secure anon and opt-in way.
