Expand /api-docs with new analytics endpoint documentation

Context: frontend/src/app/api-docs/ already exists with playground/ and examples/ subroutes -- this extends it for the ~15 new backend endpoints added in this pivot (backend repo issues Stellar-Insightss/backend#1, Stellar-Insightss/backend#11-Stellar-Insightss/backend#14, Stellar-Insightss/backend#15-Stellar-Insightss/backend#19, Stellar-Insightss/backend#21-Stellar-Insightss/backend#24, Stellar-Insightss/backend#25-Stellar-Insightss/backend#29, Stellar-Insightss/backend#33, Stellar-Insightss/backend#39).

What to do:

• Add documentation entries for the new analytics endpoints once they exist in the backend's OpenAPI spec (backend Add OpenAPI schema entries in src/openapi.rs for the summary endpoint backend#6/Update OpenAPI tags/grouping to match new IA: Overview/Assets/Wallets/Soroban/Rankings backend#32).

• /api-docs lists and describes the new v1 analytics endpoints
