Clean up Components & Assets folders

Some of our assets are unused as they were for previous years but no longer used; we should clean them up to clear space and make things easier to navigate.

Same thing with components, but for the ones that we do keep we should rewrite them to work nicely with the Nextjs rewrite.

To fix:

• Delete unused assets
• Delete unused components
• Rename components to better reflect use cases
