Makes 10-12 biscuits
- 2.5 cps of brown rice flour
- 1.5 cps of tapioca flour
- 1.5 tsp baking powder
- 1 tbs xanthum gum
- 1.5 tsp salt
- 1/2 cp coconut oil, softened
- 2 eggs
- ~ 1 1/4 cp cold water
- Preheat the oven to 350 F
- Whisk together dry ingredients
- Mix in coconot oil, cut into flours until evenly distributed
- Make a well in the flour, add eggs, whisk the eggs together. Stir the eggs into the rest of the flour. Add water, and stir into the flour until entirely combined (should be a soft dough, but one that holds it's form)
- Divide up dough into biscuits, spread out on a baking sheet
- Bake for 35 min, broil until browner (low broiler, around 2-3 min)
- Serve warm or freeze to save
