[BUILD] Update dependencies

One thing that should be tackled before reaching 1.0 is cleaning up dependencies.

Currently, we have some dependencies in [all] target that we could replace with more up to date packages or implement what we need and remove the dependency. I had this idea a few months ago but didn't work on it and #5523 brough that idea back to my mind.

@Samuelopez-ansys @maxcapodi78 I don't have the names right now but I plan to work on that next week.
