[Bug]: Special characters in mapping becomes garbled

Expected Behavior

I am using the Dragonbane system (Swedish version), to which there currently is no support within this module so I am working with custom mapping for now. I want the PDF fields to be named according to their Swedish names, but instead the field names from the PDF becomes garbled.

Current Behavior

When using Swedish letters ÅÄÖåäö in PDF fields (and I suspect any other, "non-english" letter), they are not correctly displayed in the Export Pdf dialogue, but instead using strange encodings, such as "#C3#85lder" instead of "Ålder"

Steps to Reproduce

1. Create PDF field. Use special (e.g. Swedish) letters in field name
2. Choose Export to PDF within Foundry.
3. Choose the PDF with Swedish characters to export to.

Context

Two examples of current behaviour. Top row says "Släkte" (= "Kin") where I tried to use xml character code. The lower is "Ålder" (= "Age"), unchanged.
