Add a binary for darwin amd64 to the release assets

Context and scope
The users base is mainly distributed among macos/linux amd64/arm64. CLI is expected
to support all targets but for that, the relayer execution flow on darwing amd64 fails.
It seems a minor change is required as currently darwing amd64 is filtered out on
gorelease conf.
