[FEAT] - Ensure folder tree generation is supported on windows os

Original bug: #4 "[BUG] - Log to file in sub folder is broken"

Fixed with PR: #6 "Fix - #4 - Create dir if it doesn't exist on file log"

The purpose of this issue is to ensure that non UNIX os are supporting this fix, such as windows. (more detailed in PR comment)
