New docs: Shared discv4 and discv5 handling with discovery-mode

See the source PR unifying DiscV4 and DiscV5 peer discovery with new config option --discovery-mode (which replaces --Xv5-discovery-enabled). It also removes the v5bootnodes key in the genesis config. Improve upon existing PR #2036 to reflect these changes and confirm details for accuracy.
