If this is a lab, and attendees are meant to be able to get a basic Clojure something up and running by the end, might it just be better to leave off the instructions for creating a standalone package?
If nothing else, introducing students to Clojure by having them run a Java command feels a bit ehhhhh. It might be accessible to Java devs, but many of the people--most of the people I personally know?--who get started using Clojure these days don't have recent experience with Java.

I think there should be instructions (because it's useful) BUT we can move those into a separate md file and also include sh/cmd scripts to hide the java.
