Fix sonar cloud test coverage reporting for modules

Sonar cloud analysis doesn't run for the modules of ibc-go (i.e. capability, callbacks, 08-wasm). For ibc-go itself it runs fine.

If I compare with the configuration used in the SDK, the only difference I can spot is that in ibc-go we maintain different workflow files for each module where the tests are run (e.g. here for 08-wasm), while in the SDK all the test jobs are in the same file... Not sure if this is the problem, though.
