I am year long Tasmota user and congratulate you and support devs on such a wonderful solution to our IR needs!
I have tried to go through both IRremote and tas docs but could not find the answer to my query.
Here it is:
The Hitachi_AC2 protocol is read correctly and works well but there is no Mesg Desc messages for it (IRHVAC in tasmota speak)
How can go about getting/building those?

As an example (from IRrecevDumpv2):
Daikin has such a message but Hitachi_2 does not.

That is because that particular protocol only has basic support for it. It doesn't have detailed (i.e. settings) support yet. No one has done the analysis for that particular protocol variant.

How can go about getting/building those?

Only someone with the remote & A/C unit can collect/verify the data. No one has done that yet. Us devs don't have hundreds of different A/C units laying around. ;-)

Thanks, mate - appreciate such a quick response.
While on my search journey, I stumbled upon ESPhome Climate component and realized it uses your repo as well..AND..some kind soul already ported my remote! Here it is..

I should be able to test it in a week or two but it is a release version from EHY so kinda should work.
Perhaps this can be included as an advanced code?

@NiKiZe is correct. Of the Hitachi protocols, AC2 is about the only one not fully supported. AC344 will probably not work on your AC. Feel free to try it though. We have had reports of ACs accepting multiple protocols before.
