[Feature Request]: Upgrade unfinished dataset's build with older singularity version.

What is the problem you're trying to solve?

We are trying to onboard the NIH dataset. While we are working with the old singularity we would like to switch to the V2 version with inline car preparation and just continue where we left off. Can we make this happen please?

I would like singularity to finish the dataset's that were partially builded with the older version.

Currently this is deprioritized. V1 and V2 are built very differently and the effort to make them compatible is not simple.
