Update hyper- deps

Description

We are several versions behind with our hyper- deps (hypercore, corestore, hyperblobs, hyperdrive, hyperstream/secretstream). Updating these deps breaks things, because of incompatible changes, and also because we rely on some hypercore internals.

This update is non-urgent, but the longer we wait the harder the update is (more work to identify where a breaking change is introduced), and the fixes in these versions quite possibly address edge-case scenarios that might be encountered in production.

A lot of the updates will need to happen in a coordinated fashion, because of dependencies between these packages.
