Create store categories for koblenz

As a user i want to have different categories for my acceptances stores to better be able to filter for stores and show different icons on the map to distinguish

Describe the solution you'd like

• the categories should be independent from other projects. So no reuse of existing categories
• create new category assets
• add the categories in the build config
• add the category icons to iconset and style.json (https://github.com/digitalfabrik/entitlementcard-maplibre-style)

Copy the categories from nuernberg

• it may make sense to configure categories in the build config instead of just copy the categories from other project and provide new ids.
• currently the categories are hardcoded in the styles.json layer. We may create the layers dynamically and use categoryId and projectId for mapping. Blocked by Set Map Layers dynamically  #750
