Cheeseburger Casserole

A kid-friendly and delicious casserole perfect for cheeseburger lovers.

Ingredients

  • 2 cups (6 oz) uncooked rotini pasta (brown rice pasta for GF)
  • 2 tsp olive oil
  • 1 1/2 cups onions, finely chopped
  • 1 garlic clove, finely chopped
  • 1 lb lean ground beef (95% lean) or veggie ground
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp tomato paste
  • 28 oz diced tomatoes
  • 2 cups reduced-fat grated cheddar cheese
  • Optional: 1/4 cup chopped dill pickles, 2 tbsp Dijon mustard

Directions

  1. Cook pasta al dente and drain.
  2. In a skillet, heat oil. Cook onions until soft, add garlic, then beef. Season and cook until browned.
  3. Stir in tomato paste and tomatoes (add Dijon mustard if desired). Simmer until slightly thickened.
  4. Toss pasta with the tomato mixture, top with cheese. Cover to melt cheese.
  5. Optionally, sprinkle with chopped pickles before serving.
