Update transformer defaults for orm.xml

Noticed that the transformer defaults for updating orm.xml don't include the 1.0 and 2.0 versions, could those be added?

I think the versions in there were to support the naming change from Jakarta EE 8 to Jakarta EE 9 (javax -> jakarta). Jakarta EE 8 has Jakarta Persistence 2.2 which is probably why 2.0 and older versions are not included.

You can always use your own custom configuration if you have special needs.
