Now that we have both an ID and a timestamp for every metadata value set, It could be useful to access the history of previous values. This could work for all metadata targets, i.e. transactions & accounts.
Not sure yet about the API to access it though, should we embed the metadata history in the target object or should we provide a separate endpoint?
