It is, of course, beyond the scope of the mermaid2 plugin. I am not sure, either, that the Material theme would be the proper place to look at for a solution. Perhaps a future plugin?

The question of how to print mermaid diagrams is complicated and has many ramifications.
Issue #33 asked about the plugin mkdocs-pdf-with-js. Its implementation is interesting (it uses Selenium/Chrome).
On the other hand @squidfunk pointed out that the Material theme for MkDocs will just shrink/stretch images and diagrams to fit. That strategy has the merit that it will always work (it is a sensible default).
It might not, however, always be the most appropriate one (as an analogy see the various strategies available in Microsoft Excel, to handle a large page) and page breaks might be called for. In general, I would think of a "display hint" in the YAML header of the markdown page.
