Currently, mcp files contain a list of servers. This was originally done in the context of #6 so that we could have a shared data plane for the deployed MCP servers. However, we decided to move away from providing an operator due to the existence of great operators like ToolHive. As such, I think it would be clearer to users and simplify a lot of our code if we move to only allowing one server per mcp file.
