A mod might be doing something weird. Try reproduce with only BBOR. If the issue persists, try finding the minimum set of mods reproducible.

My 1.21 server crashes as well. I took out every mod except Fabric API and BBOR and still receive the error.

I am also having the same with error java.lang.NoClassDefFoundError: net/minecraft/class_368.
