Docker Container - Minecraft PAPER build version auto down from 85 to 61

Hi there. this is my first post!

Today I've restarted my server to auto update to the newest 1.21.10 build 89 from 85, but instead I got build 61.
Did it happen to anyone else?

This is my docker-compose.yml file. I tried different variations as well, same result:

I just recently improved the code that picks up Paper build versions. Do a docker compose pull and docker compose up -d and see if that fixes it.

I just did it. It didn't solve the problem, but now there is a differece between
image: itzg/minecraft-server:latest 1.21.10-61
And
image: itzg/minecraft-server:stable 1.21.8-60

Before the docker compose pull, I had same version for both (the latest one).

For more context, here is what I've got in console after docker compose pull from stable to latest:

You're not correctly pulling or applying the image correctly. These logs indicate this image is very old, form August

[init] Image info: buildtime=2025-08-30T00:29:13.

Also you're missing the channel configuration
