Evaluate I/O latency of read write

I'm working on a research for project for my masters degree to identify the latency of I/O in different file systems (Object storage).
Though I tried with "juicefs profile <>", using the data from .access log, I still get the CPU time for the operations.
I will be thankful if you could share a method to analyze I/O latency.
Note: I tried with the node_exporter, but the data was not structured and was not able to dump to a file.
