LiveView Native Clients: Use PhoenixChannelsClient from liveview native core rather than java-phoenix-client40

Over in liveview-native/liveview-native-core#61, we exposed https://github.com/liveview-native/phoenix-channels-client/ through the liveview-native-core uniffi bindings. Let's make use of those.
