Provide enough documentation for example parquet tables

In the examples, the schema of tables used for local search notebooks and global search notebooks are not aligning with documentation. Either documentation is lacking something or something else is missing.

For example, some fields of the create_final_entities, create_final_nodes parquet tables are not clear in docs/examples direcotry.
