dune-project formatting

I realise this is just vanity, but I think if we'd group related things together, it'd be a bit easier to parse and reads a bit better.

I think the extra spacing attempts to make things clearer, but ends up having the opposite effect and fragmenting the file a bit too much.

Official and popular packages in the ecosystem also follow this more compact, grouped style so it might make sense to adopt it as the default.
