But I want to replace the orchFileServer with my local server, is there any documentation on how to do it?

No. I want to create a custom image and host it in my local server and deploy it. This is more customization that we can do in EMT.

Please see if this helps solve your issue, you would need to host the image on a web server with HTTP or HTTPS that includes a trusted certificate (e.g. LetsEncrypt) for your testing.

Yes this is what I was expecting. Can you let me know when I can expect this released officially? Is there any beta release i can try?
