Having issue getting monitoring showing in app insights

For some reason none of my chat completions are showing up under app insights traces nor metrics. I've confirmed all other logs app wide are showing after having switched from standard app insights bootstrapping to open telemetry. I've also decompiled the code and debugged the chat completions call which correctly seems to detect the app switch and initialize a logging scope.

Can someone help with additional debugging suggestions? Here is my registration pipeline:
