[BUG] plotters-backend crate is missing MIT license text

Describe the bug
While attempting to package the plotters-backend crate for Fedora it was discovered that the License file here contains the string literal "../LICENSE" instead of the MIT License text.

It appears that this affects all crates published from this workspace, not just plotters-backend.

In the "plotters" crate, it also affects the README.md file since that is also a symbolic link.
