Documentation says it's plotting celsius, but it's plotting Kelvin

This section of the documentation on plotting tries to illustrate diverging colour map, but it uses the default because it never transformed the values from Kelvin to celsius.

The docs are saying: up to this point you have been seeing diverging colormaps because the units were Celsius and contained 0, but look at the colormap that gets used if we plot using the original units.

Please feel free to open a PR to update the wording!
