Develop infrastructure to ensure reproducibility of the model

We have to ensure stability of the modelling workflow to make it possible reproducing the workflow from older model configurations.

As discussed with @pz-max, a possible concept may look like:

1. Improve versioning:

• model;
• configuration file;
• data files;
• documentation.

2. Document environment specifications for each version.
3. Ensure that documentation is adjusted properly for each major change in the model.

Datakits for each version can be hosted on zenodo, but we have to make sure that licenses of all the original datasets allow to re-distribute the derived products.
