Bump Ghidra Version

What is the use case for the feature?
With the recent move to debian 12 and the subsequent upgrade to JDK 17 we can upgrade ghidra to the next major release (11.1.2) which included support for many new features such as Xtensa ISA support.

Does the feature contain any proprietary information about another company's intellectual property?
No

How would you implement this feature?
Change ghidra download url and anywhere the old 10... version was referenced.

Are there any (reasonable) alternative approaches?
No

Are you interested in implementing it yourself?
Yes

Feel free to try this out. I believe you would need to change are:

• the ofrak ghidra Dockerstub
• the ofrak ghidra config file
• any documentation / references

As an FYI, @dannyp303 is also exploring using the pyghidra bindings to improve Ghidra support (#530).
