Documentation: Data sources incomplete / inconclusive

In the documentation for [configuring loudml](https://loudml.io/en/loudml/reference/current/settings.html), only elasticsearch and influxdb are mentioned. However, later on, MongoDB is also mentioned. Can you please update all available types and clarify?
