[Feature] Release arm64 binaries

What is the problem you're trying to solve?.
Run finch-daemon on an arm64 ec2 instance.

Describe the feature you'd like
On the releases page only amd64 binaries are available. For future releases could you please release arm64 binaries as well?

PR was created to release arm64 binaries.

Looks like #105 reverted adding the arm64 builds due to lack of e2e testing. Now that GitHub has public arm64 runners, can this be revisited?
