Add Celo as a network to the default networks

First of all, we love the new Scaffold ETH 2. You did really amazing work with the update to this new lightweight version.

One thing, that I would like to propose would be to add Celo as a chain to the default networks to the starter kit.

Celo, an upcoming L2 chain in the Superchain Ecosystem, has existed for more than 4 years (as an L1) and built a strong developer community.

The Celo ecosystem has been focusing with its mission and architecture on real-world users and use cases which is showing in the current numbers of more than 600k+ DAUs.

It would be great if we could add Celo to the networks before ETH Global Bangkok.
