docs: fix myst_enable_extensions error in publication workflow

This should fix the error in https://github.com/scylladb/java-driver/actions/runs/14710534817, which currently prevents publishing new versions of https://java-driver.docs.scylladb.com/

Rolled back some dependencies in `poetry.lock` to previous versions while we investigate how to make the extension `sphinx_scylladb_markdown` compatible with the latest versions.

No need to backport.
