Would it be possible to see an improved in-game settings menu akin to what we've seen in the 2010 remaster of the game (see below)? Or is the goal to be more faithful to the original game?

The main goal of this project is to stay as close as possible to the DOS version 1.2.

But I've already thought about adding an extended game settings menu in the future.
I could maybe make it configurable, extended game settings menu on/off, something like that.

Nukeykt is working on official classic port sdlraptor (Based on the original DOS 1994 and Windows 1999 source code).
The cool thing about this version is you can switch between 1994 mode and 1999 mode in the game settings menu.
Source code for sdlraptor will be available in the future.
Here is a YouTube link where Scott presents the classic port: https://www.youtube.com/watch?v=vYDYox1ze0c

Well if you're not planning to add any in-game options, what about having an external setup program, kind of like Chocolate Doom?

You can download (Windows) or build Raptor Setup: https://github.com/skynettx/raptorsetup

Ohhh! Thanks. Just as a word of advice, I'd recommend having raptorsetup be a part of the same repo as your port to avoid confusion. Is there any plans for this?

No currently no plan to do that.
