By default, samplicate intercept all on ipv4 interface ( 0.0.0.0) but not for ipv6.
So with ipv6 and multiple address, we must start multiple samplicate instance with -s

Thanks for your report. I would really like samplicate to be useful with IPv6. Did you try -s ::? In general, :: is the IPv6 equivalent for what 0.0.0.0 means in IPv4.
