Reenable geyser plugin dependencies

Our latest update of LiteSVM caused a clash with the available solana-geyser-plugin-manager dependencies.

Rather than hold up fixes that came with updating litesvm, which would benefit all users, we chose to temporarily disable the geyser_plugin feature and remove its dependencies.

A version of the two deps (litesvm + solana-geyser-plugin-manager) that is compatible still is not out. Once it is, we should re-enable this feature.

In the meantime, the branch v1.0.0-geyser has all of the v1.0 features except the litesvm update, and has geyser enabled. Geyser plugin enjoyoors should build from this branch.

Sure, you can try @subhdotsol, but the last I attempted there was still dependency conflicts, so I think there's nothing we can do until a new version of the geyser plugin manager is available.
