If needed, how safe would it be to to ingest a solokey v2?

well a C-port could break off and edges especially on the USB-port can get annoying. otherwise the issue would be the silicon the case is made of and the PCB's plastic and the epoxy. the chips and all are covered by the epoxy so unlikely to be a problem I guess

Question is about "destruction" it seems? I don't that swallowing it will destroy it. But it might destroy your gut.

Safer to destroy it some other way (besides, what if it comes out the other end? stomach acids may not do it a lot of good, but it may not do you a lot of good either; an who knows whether it's vegan...)

Rewording the question to "how to destroy the key", it would depends what's available to use as tools:
A better and safer approach may be to physically break it in two (not just break off the USB plug) such as by hitting it while wedged between a wall and floor (stamping on it with the heel of a shoe may work);
then smash or grind the ICs with or against a rough surface like a file, brick or stone (try to expose the silicon wafers if possible, nitric acid would probably also work to remove epoxy and chip encapsulation, but is messy/dangerous and may not be available);
lastly consider throwing the PCB and IC remnants in a fire (or melt on a stove or some-such if available) or microwave them, ...

If you think emergency destruction of the key is so important I would also carry a nice sized rock, hammer, or icepick...

Another thing to consider - that epoxy seal may keep the key from being destroyed in your stomach... certainly the metal parts aren't going to digest well... Just sayin'
