For instance you default to PNG so I can't add &format=image/jpeg?

Thanks for the issue, the project is a hobby project, started a long time ago and is basically running on life support with no plans to maintain or develop it further :)

There is the https://github.com/mapbox/whoots-js with more features and I think mapproxy (?) might also be a solution.
